With the new year ringing in, I am trying to focus on a good reset. I am a firm believer that you can reset at anytime and you shouldn’t wait for New Year’s to do so, BUT it is a good opportunity to push myself with some good habits. I planned out meals this week and found a recipe to try by eazypeazymealz. Greek chicken bowls are not only healthy but super customizable and great to have for a dinner and then use leftovers for lunches throughout the week.

I really enjoyed the flavor of this recipe and think you will too! It did take a bit more time/effort than I wanted but it’s worth it because I now have leftovers to have for lunches this week!
- Time and Effort: Medium
- Standard dinner recipe. It isn’t hard but there is a lot to do…chopping veggies, marinating chicken, etc.
- Skill Level: Easy
- Suggestions:
- Plan ahead – make the marinade for the chicken early and let the chicken sit in that for as long as you want throughout the day. The recipe required a minimum of 20 or 30 min but the longer you let it sit, the better!
- I ended up using chicken cutlets so that I could have more marinade on the piece and so that they would cook more quickly.
- Make the tzatziki! Don’t skip it, it is so yummy!
- I also made a couscous to put in the bowl on the side but I also think quinoa would taste great and be a great option.

I will definitely make these again! My husband also loved them which was a good reference to know I should make them again! Not only were they super flavorful, I felt healthy and like I was putting good things into my body!
