LL Recipe Review: Gilmore Girls Coffee Cake Cookies

All I can say is “WOW!” These cookies came across my instagram feed and the icing drizzle had me hooked. I actually had never heard of these cookies before (even with being a loyal Gilmore Girls fan) but seeing the title and that crumble made me immediately want to try them. These cookies ended up being pretty easy – they do require some coordination with the various parts of the cookie but let me tell you…it’s VERY worth it. There are so many recipes for these specific cookies on google but I specifically used “The Palatable Life’s” recipe linked here.

  • Time and Effort: Medium
    • This is definitely on the verge of easy but there are components you need to do in parallel (like the icing) and I ended up using a ton of bowls between the icing, the streusel, the mixing, etc.
  • Skill Level: Easy (you don’t need to be a cookie master to make these delicious!)
  • Suggestions:
    • Plan ahead – take the butter out of the fridge and just let it sit and get to room temperature well before you plan to start
    • I ended up making large cookies as the recipe suggested which were amazing and the cook time ended up being perfect. I feel that they can be easily overcooked so err on the lower cook time and check them periodically.
    • If your cookies are flat or not turning out well, check your expiration dates on your flour and baking soda and powder. I’ve noticed that sometimes newer flour and newer baking soda or baking powder can help tremendously.
  • Helpful Tools Used (linked to Amazon page):
    • Stainless Steel Mixing Bowls (these are wonderful because of the no slip bottoms and they have lids!)
    • Measuring Cups (I love these because they remind me of tiny pots!)
    • KitchenAid Mixer (I have the classic version but there are a number of versions to check out)
    • Cookie Scoop (you could also use a spoon but this makes it a one handed, quick activity)
    • Cookie Sheet
    • Silicon Baking Sheets or Parchment Paper (I like this one because it is unbleached) – I used silicon baking sheets in my recipe but I alternate sometimes if I don’t feel like cleaning after.

Next time when I make these I need to plan to bring them to a friend or neighbor…my husband and I ate all of these in an embarrassingly short amount of time. They are SO good!
