LL Recipe Review: Joanna Gaines “After School” Banana Bread

It’s gotten chilly outside and, to me, there is just something about warm banana bread that makes me so happy when we head into fall. I decided to make one of my all-time favorite banana bread recipes this week – Joanna Gaines “After School Banana Bread” recipe linked here or check it out in her cookbook (a staple for me) with affiliate link here. There is something different about this recipe…perhaps it’s the perfect amount of butter and sugar or maybe it’s the fact that this banana bread is not made in a loaf pan…either way it is totally worth baking!

  • Time and Effort: Easy ( <30 min prep + baking time) 
  • Skill Level: Easy (I think anyone can make this!)
  • Suggestions:
    • I used dark brown sugar instead of light – I personally think it adds a little bit more flavor
    • I think you can cut the salt in 1/2 (especially if you are already using salted butter)
    • I mash the bananas with a fork to keep some of the chunkiness
    • Line the baking dish with parchment paper (as mentioned in the recipe), it is so easy to pop out of the dish
    • I excluded the nuts this time
    • Add a bit of vital proteins collagen powder to the batter to add some protein and make it a *little* bit better for you
